Grapes harvested at the end of September 2019 from 4 vineyard plots in Laje, Seixal.
 
VINIFICATION
 
Grapes were carefully selected and transported in boxes of 20 kg. Vinified with the whole grape in a press with 24h of maceration, fermented at controlled temperatures between 10oC and 15oC.

100% Sercial from Seixal.
 
TECHNICAL SPECIFICATIONS 
 
Alcohol: 11% vol.
Total acidity: 8,28
Residual sugar: 0,6 g/l
pH: 3,02
 
MATURATION
 
After the alcoholic fermentation, wine was fully aged in used French barrels during one year until its bottling. In October 2020, 494 units were bottled.
 
SERVICE TEMPERATURE
 
Best served between 10/12oC.

TASTING NOTES
 
Citrus colour.
Very delicate aroma, hints of peach and green pineapple, dried vegetable, yellow stone fruits and a note of basaltic. Fine and sophisticated palate. Balanced and fresh acidity, citrus flavour, mineral and saline with a lovely dry finish.
Excellent as an aperitif.
Seafood, grilled or marinated fish.
